Carroll's Distillery began as a hobby distilling project in 2016. Owner Mathieu Carroll wanted a way to make full-bodied rum, something that is often hard to find in stores. Artisanal, batch-distilled spirits are quite different from industrial products, and this difference was something worth sharing. To do so, a small section of Carroll’s Bakery was renovated into a distillery in April 2019, and Carroll’s Distillery opened for retail in March 2020. Moving forward, the plan is to develop a full portfolio of rums, select liqueurs, and rum cakes. While the light-bodied rums are approachable and easy to appreciate, the goal is still to make full-bodied rums for the dedicated rum enthusiast.
Mathieu Carroll is also an avid nature enthusiast, and their labels reflect this with local birds on them. Carroll's Distillery is proud of more than just local wildlife though, the distillery is a place to find and buy many local NB craft alcohol products.
